Elk Burger Mix
Elk meat is naturally lean, so adding some fat is crucial to making juicy and delicious burgers.
Ingredients:
1 pound ground elk meat
3-4 tablespoons Beef Tallow
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
2 tablespoons minced fresh parsley
1 teaspoon minced garlic or garlic salt
1 teaspoon Worcestershire sauce
1/2 teaspoon smoked paprika
1/2 cup panko bread crumbs (if you want to add a binder and additional moisture)
1 egg (another option for a binder)
Instructions:
1. In a large bowl, gently combine the ground elk meat with the beef tallow or your chosen fat (grated butter, or bacon fat work well).
2. Add the salt, pepper, garlic powder, and onion powder to the elk mixture.
3. If using, incorporate any additional herbs or seasonings, like parsley, Worcestershire sauce, or smoked paprika.
4. If using a binder, such as panko breadcrumbs or an egg, add them to the mix at this point.
5. Gently combine all ingredients with your hands, being careful not to overmix, as this can make the burgers tough.
6. Form the mixture into desired size patties. A common recommendation is to make an indentation in the center of each patty to prevent it from swelling during cooking.
7. For best results, chill the patties in the refrigerator for at least 30 minutes before grilling or cooking
8. Add whatever your favorite burger condiments are and enjoy! (not my original recipe-internet obtained)
